Ingredients
1.3kg
malt extract
450g
sugar
60g
hops
1 tsp citric acid
I tsp salt
1 tsp bottom fermenting (lager)
yeast
18l
water
Method:
Boil
sugar
with 600ml of the water and the citric acid, until light golden in colour. Pour into a closed type
fermenter
containing 9l of the water.
Simmer
malt extract
, salt, and hops for 30 minutes. Pour or strain into the
fermenter
. Allow to cool below 27°C.
Add 1 teaspoon of dried bottom
fermenter
(lager)
yeast
.
After 2 days, place
water
into the
fermentation lock
. When
fermentation
is complete, allow the beer to clear to a reasonable degree.
Take 24
bottles
and proceed using the previously described method.
Mature for at least 4 weeks.
